“Khoya mawa is a dairy product made by slow cooking milk into a thick concentration, and is widely used in the cuisine of the Indian Subcontinent,” explained the owners of Accha Authentic Indian Cuisine. “Our restaurant’s gulab jamun dessert is made from khoya mawa which is then molded into bite-sized balls and fried in ghee butter before coating it with syrup. Our other popular dessert, Rasmalai, is basically dumplings in coconut cream but uses the cheese ball mixed with pistachio, almond or caramel instead and served with a cold milk cream.”
