The golden age of Thai sweets was when Maria Guyomar de Pina (Thao Thong Kip Ma) a Portuguese lady ran the royal kitchen in 17th century Ayutthaya. She was married to Constantine Phaulkon (Chao Phraya Wichayen), a Greek adventurer, who ended up being the most important advisor to the Thai king at the time. Maria introduced Thailand to some of its most famous desserts today including the kleeb lamduan Thai shortbread cookies, the sweet golden rolls, golden four-leaf clover, golden egg strips, steamed custard and many other dishes.



“The golden egg strips a traditional royal Thai sweet that has been in my family’s recipe book for generations. All that is needed are egg yolks and syrup. Once the syrup is boiled in the pan, pour in the filtered egg yolks through a funnel, the smaller the holes the better, and wait until it is cooked before setting them on a plate,” explained Jay Yai, of Phetchaburi Thai Sweet Dessert at Ton Phayom Market
