Even with all the Italian restaurants in the city today, we Chiang Mai diners are still only experiencing a sampling of Italy’s vast culinary treasures; each region has endless varieties of recipes, ingredients, techniques and flavours so distinctive and varied we can happily spend a lifetime exploring.

If you love the rich multi-cultural flavours of Sicily, or want to taste them, then head on over to Le Meridien Chiang Mai’s fine restaurant, Favola, where Chef Luca writes love letters to his homeland of Sicily on the plate.

Over the next three months, there will be a special three course meal special set from which you can choose to explore the flavours produced from the cerulean seas and arid hilly isles of this famous island.

With a focus on the wonderful catches of seafood found in the Mediterranean, Chef Luca starts his first dish with pan-fried tiger prawns in AOP sauce with garlic, extra virgin olive oil, Parmesan gel, black garlic chips and micro cress, or you can choose to start with the white asparagus with poached egg, chive Béarnaise sauce and fresh truffle slices.

Next is the absolutely delightful Australian bone marrow risotto with the buttery and creamy richness of the full-flavourred bone marrow perfectly paired with Carnaroli rice risotto with delectable slices of fresh truffle, Spumante wine, Parmesan, salted butter and some bread crumble.

While we highly recommend the bone marrow dish, if you prefer fish, then you are not settling for second best, as the grilled swordfish fillet arrives tasting fresh, firm and crusted with raisins, pine nuts, bread crumbs and orange fillets, bursting with flavour, when served with red vinegar onions, garlic confit and sour peppermint sauce – simply an explosion of tastes!

End the meal on a very high note with the Pina Colada mousse which is served with fresh mango, coconut and some deeply satisfying chocolate soil.

Favola is a fine dining experience, with a fabulous wine cellar of Italian wines from all regions to complement every dish and every preferred taste, but if you are just wanting a jolly good meal, simply pop in and indulge.
