Szechuan/Sichuan cuisine has been taking Thailand by storm for the past few years now, with mala hot pots, mala grills and mala-forward restaurants vying with coffee shops for Chiang Mai’s taste hunters. Szechuan Province, with its capital Chengdu, sits in the middle of China, its strategic position at the crossroads of trade through history helping to mould its curiously addictive cuisine into what it is today. For we Thais, its bold flavours and almost brash use of chilli and garlic, has made it a big hit here.

While the indigenous mala, the oddly numbing pepper, is most associated with Szechuan cuisine, it is in fact, the incredible variety of fusion imports that makes it so successful. Fried potatoes were introduced by Catholic missions; chilli from Mexico likely via Macao or India; and broad beans and sesame didn’t arrive until the Middle Ages via the Middle East. However, Szechuan’s chef through history embraced it all, and today Chengdu has been declared a city of gastronomy by UNESCO.

Dig into crowd favourite, the famous mapu tofu, where satiny tofu bites are covered with the rich flavours and oils of chilli, mala peppers, fermented beans and garlic. The fried chicken dish is virtually drowning in vibrant red chilli and peppers, which appear far hotter than it actually tastes, thanks to the chef’s deft balancing act. An organ harmony can be found in the mala broth which offers sweet, salty and peppery chilli tastes. Then there are the milder dishes with simple and few ingredients such as the fried potatoes and the crispy pork belly fried with green peppers.
