If you are one of the thousands of people who have visited Jing Jai Market’s Weekend Farmers’ Markets over the past decade, then you are sure to be more than familiar with the delicious aromas of baked goods wafting from the popular Nature Chiang Mai stall. This adorable stall selling all sorts of utterly delicious—and healthy—baked products, is run by the beautiful and smiling Alyssa ‘Nun’ Wanichanuntakul who is living the dream she first had when she was at Chiang Mai University tinkering with baking and visiting local community and health foods markets.
“During my years at university I often found myself really enjoying visiting community markets run by people who put love and attention into their products,” said Nun of how she has become one of the most popular vendors at the very popular Jing Jai Market.
“I used to take weekend strolls around various health markets and parks which were really beginning to get popular across Chiang Mai at the time, chatting to vendors and learning about what they do. I enjoyed supporting local makers and vendors, I appreciated food that was healthy and organic, and I began to spend time learning about where food ingredients came from, how they were made and what health benefits they provided. My grandmother had an organic farm in Chiang Rai when I was growing up and I had always had a deep appreciation of quality produce and how it is important for the health. I found myself cutting classes more and more and spendig time in my tiny kitchen where I started off by learning how to make Japanese and wester desserts from a recipe book. I started with a simple brownie and slowly tried making strawberry shortcakes.”
Nun spent a year and a half apprenticeship at the Mandarin Oriental Hotel before becoming an assistant teacher at Le Cordon Bleu in Bangkok teaching how to make artisanal breads and baked products, then getting Certified as an International Health Coach from Ohio.
“Ten years ago I applied to Jing Jai Market and have been selling here ever since.”
Not one to sit on her laurels, Nun is constantly developing new recipes for her legions of loyal customers to try out. Her focus on health means that she does her best to use organic produce, she bakes fresh daily, she serves vegan and wholewheat baked goods, she uses natural yeast and she also makes dairy free products.
“I think that my customers know that what they get here is attention to detail, simplicity, quality and a focus on health. We hardly use sugar in our products, we stuff our baked goods with generous fillings, and we carefully choose all of our ingredients.”
Nun says that if you haven’t visited her stall at Jing Jai Market and you get a chance to pop by, she highly recommends her signature sweet potato and red bean bread, with the sweet potatoes sourced from an organic vendor at Jing Jai Market and the red bean supplied by the Royal Project, this is a delicious delicacy that uses no sugar. Her black sesame sour dough is also another crowd pleaser which is chemical-free and filled with healthy produce.
