Jo – Manit Tamnakthi, owner of the cafe B(e)arista Chiang Mai, took us to Good Old Days this month, a beautiful homestay surrounded by the paddy fields and mountains of Mae Taeng, where its owner spends most of the days in the kitchen making healthy and delicious food and baked goods.

One of his favourite dishes is the mackarel in spicy shrimp sauce with young coconut, which mixes mackerel and shredded dried shrimps in a chilly paste, the dish being infused with rich aromas and flavours. He always leaves room for a carrot scone before heading back to the city.
