จาก Utopia สู่ UtoPai กินดี…ที่เมืองปาย
“Utopia” คือดินแดนในอุดมคติที่ไม่มีอยู่จริง ครั้งหนึ่งปายเคยถูกเรียกว่า Utopai โดยกลุ่มนักท่องเที่ยวแบคแพคเกอร์แสวงห เป็นแหล่งของมนุษย์ New Age ผู้แสวงหาจิตวิญญาณอันสงบสุข และ Neo Hippies บุปผาชนหัวใจอิสระ นักเดินทางกลุ่มนี้เดินทางมารวมตัวกันอยู่มาก จนปายได้กลายเป็น Back Packer’s Mecca ของประเทศไทย หลังจากการปราบปรามยาเสพติดทำให้กลุ่มฮิปปี้หายไปบ้าง และหนังเรื่องปายอินเลิฟ ในปี 2009 ก็ทำให้นักท่องเที่ยวชาวไทย หลั่งใหลมาเที่ยวปายอย่างมากมาย และปัจจุบันปายมีนักท่องเที่ยวชาวจีน และชาวเกาหลีเพิ่มมากขึ้น สิ่งเหล่านี้สร้างสีสันและความหลากหลายให้กับปาย หลายคนจากหลายเชื้อชาติผันตัวจากนักท่องเที่ยว กลายมาเป็นคนพื้นที่ และร่วมกันสร้างสิ่งดีๆ ให้กับเมืองปาย เพราะพวกเขาเองก็ต้องการคุณภาพชีวิตที่ดี สังคมที่ดี และอาหารที่ดี หล่อเลี้ยงครอบครัวของเขาเช่นกัน ทำให้สิ่งที่เกิดขึ้นในปายวันนี้ คือ ส่งผ่านอาหารคุณภาพในแบบที่ตัวเองกิน ไปให้กับผู้มาเยือนทุกคน สิ่งที่น่ายินดีอีกอย่างคือ มีการทำเกษตรอินทรีย์มากขึ้น มีพ่อครัวแม่ครัวฝีมือฉมังเพิ่มมากขึ้น การมาเยือนปายครั้งหลังๆ จึงเป็นการกิน…กิน…กิน และกิน อย่างมีความสุข และรู้สึกปลอดภัย

Acrobaleno is the reincarnation of Chiang Mai’s first beloved restaurant Babylon which opened its doors four decades ago. Carrying on with the tradition of quality and authentic flavours at great prices, there are some exciting new dishes we dare you regulars to try. The pappardelle pasta with slow-cooked beef, made from scratch, is tender, flavourful and filling. Popular in Milan, Italy, this Chiang Mai version can more than hold its own. The spaghetti aglio with river prawns arrives meaty and aromatic, served on a bed of orange pesto spaghetti and if you love clams then definitely try the Manila clams with white wine.

Homglai is the café brand of the wildly successful Hillkoff. It has recently opened a new branch at the Science and Technology Park and is serving food to pair with coffees. Being a four-decade long expert on all things coffee, Hillkoff has proven itself to be at the forefront of Chiang Mai’s coffee culture and development. Using mainly local ingredients and local coffees, what they call the ‘arom mixologist’ or mood mixlologist knows exactly what coffee to serve with which dish.

Egg noodles can sometimes be filled with preservatives, taking away from its unique flavour. So if you love classic Chinese egg noodles, head over to this noodle shop to sample their delicious homemade egg noodles which come in three colours; the classic yellow, the green ‘yok’ noodles (colour originally from kale) and a new classic charcoal noodle. Chinese people believe that egg noodles help with longevity and it is often used in offerings as well as being a table-staple for all important occasions.

Main Dish: Collecting and Tasting Memories
Heads have been known to turn when driving past the incongruous-looking European style complex on the second ring road where a cluster of buildings boast Mediterranean, German gothic and even a hint of Dutch architecture. Inside this unique project is a charming restaurant and café surrounded by tropical greens and decorated and adorned with faded old photography, fascinating ancient cameras, gently ticking wall clocks and an eclectic assortment of objets d’art. Lovingly created by a young Thai owner who spent most of his years living abroad, often travelling around Europe with his father who also spent many years in numerous countries, Nath Deeananlarp has built a restaurant which serves up a menu to hark back to the best memories of his life, often involving sitting in a kitchen in some corner of the world tasting home made delights. Friendly and always interested, Nath can often be seen sitting in his restaurant, cup of coffee in hand and focused on his lap top. He wanders in and out of the kitchen overseeing the meticulous preparation and cooking and stops to chat to guests and friends along the way.

Street Spotlight: Curry Puff Patcha
The owner of Chiang Mai’s most famous Chinese restaurant, Jia Thong Heng, Pannee Jiarasatit introduced us this month to her favourite curry puff vendor, Balang Curry Puff. Pannee has always loved curry puffs and when she saw a post on Facebook about this shop, she headed over and fell in love with the light thin pastry and the quality stuffing: chicken, taro and beans. “I used to sell curry puffs in Bangkok to pay for my son’s upbringing, but now my son has taken over and he cares for me,” said the shop owner Patcharaporn ‘Pat’ Unprasert. คุณพรรณีชื่นชอบรับประทานกะหรี่ปั๊บไส้ไก่ผงกระหรี่มาเนิ่นนาน ในวันหนึ่งคุณพรรณีก็ได้เห็นร้านกระหรี่ปั๊บพัทชา มาเปิดขายบริเวณถนนทุ่งโฮเต็ลผ่านบนเฟสบุ๊ค จึงลองมาซื้อกลับไปรับประทานและเกิดความรู้สึกชื่นชอบกระหรี่ปั๊บของร้านมาก เนื่องจากแป้งกะหรี่ปั๊บมีความบางกรอบและอัดแน่นไปด้วยไส้อยู่ภายใน อีกทั้งยังมีรสชาติอร่อย กลิ่นหอม ไม่แฉะเลอะ ประกอบกับวัตถุดิบผงกะหรี่ที่ร้านได้เลือกใช้ก็ไม่ฉุนจนเกินไป ทำให้ รับประทานได้ง่ายอิ่มสบายท้อง
Royal Cuisine: Hungry Royal Diaries from a Faraway Land: letters from HM King Rama V to his daughter while touring Europe.
When King Chulalongkorn Rama V visited Europe in 1907, he wrote a total of 43 letters to his third daughter, commonly known today as Letters from Father to Daughter. The letters were published under the title Hungry Diaries as part of His memoir called Klai Ban (far from home) and were charmingly filled with His musings and longings for his favourite Thai dishes, which He missed dearly. The letters touched on daily duties as he travelled through various European countries, though some of the most charming passages are in the telling of His dreams of Thai food such as when He was sailing the Mediterranean and dreamt of salted eggs, chilli dips, fried fish…even saying that he dreamed of ghosts of dried fish chasing Him! He woke up and sadly had to settle for an apple.

“…ไข่เจียวอีกอย่างหนึ่งที่เราควรจะทำกินได้เอง คือเจียวข้างล่างสุก อ่อนอย่างไข่เจียวฝรั่ง แล้วจึงเอาไข่ผสมกับเครื่องปรุง มีหมูแฮมแลเนื้ออะไรเล็ก ๆ เห็ดหยอดลงไปที่ตรงกลางแล้วพับทันที กดขอบให้ติดกันไม่ให้ไข่ที่กลางนั้นไหล สำเร็จจนไข่เจียว ข้างในเป็นยางมะตูม สำหรับกินเวลาเช้าอร่อย พ่อคิดถึงลูกจึงเล่าเข้ามาให้ฟังเช่นนี้…” จดหมายฉบับนี้เป็นจดหมายจากพ่อถึงลูกที่เรียบง่ายแต่งดงาม โดยเฉพาะประโยคสุดท้ายที่ว่า “พ่อคิดถึงลูกจึงเล่าเข้ามาให้ฟังเช่นนี้” นับว่าเป็นสื่อสารความรู้สึกได้อย่างไม่ขัดเขินและกลับกลมกลืนไปกับเรื่องราวของอาหารอย่าง “ไข่เจียวอย่างฝรั่ง” หรือออมเล็ตได้เป็นอย่างดี แต่จดหมายฉบับนี้ไม่ใช่จดหมายจากพ่อถึงลูกธรรมดาทั่วไป เพราะเป็นบทบันทึกหนึ่งที่ปรากฏในหนังสือพระราชนิพนธ์ไกลบ้าน ผู้เขียนจดหมายฉบับนี้คือ พระบาทสมเด็จพระจุลจอมเกล้าเจ้าอยู่หัว รัชกาลที่ 5 ทรงมีพระราชหัตถเลขาฉบับที่ 13 เมื่อวันที่ 8 พฤษภาคม รัตนโกสินทร์ศก 126 ขณะประทับอยู่ ณ เมืองซันเรโม ประเทศอิตาลี เมื่อครั้งเสด็จประพาสประเทศในแถบทวีปยุโรป

Aptly named Café de Oasis, is a sanctuary of lush tropical greenery, trickling water and fine mist, keeping all customers cool year round while they laze back with an aromatic cup of coffee, a refreshing fruit juice or a bite of sweetness. One of the café’s most popular dishes is it green tea crepe which is filled with layers of cream and kidney bean, making for a sweet and rich bite which is then served with fresh fruits which cut the sweetness to perfection. If you can’t get enough of green tea, then wash it all down with a piping hot cup of freshly brewed green tea.
Kitchen Culture: Nikkei-Peruvian Dishes at Anantara Chiang Mai Resort
To those who don’t know much about South America it may sound incongruous that the Peruvian cuisine is similar to that of Japan’s. When rumours of Latin American gold reached Japan in the late 19th century, the first exodus of Japanese miners left their shores in hopes of riches provided by a new land. Over the years, their numbers grew and today Peru, after Brazil, has the largest population of ethnic Japanese in South America. The fact that Peru’s shoreline is over 2,000kms long also means that seafood is plentiful, a key protein in Japanese – and now Peruvian – cuisine. The fusion of Peruvian and Japanese cuisine is colloquially called Nikkei and Anantara Chiang Mai Resort’s Chef Fernando Gabriel Soeda, being an ethnic Japanese Peruvian himself, is here to introduce it in all its glory to us here in Chiang Mai.

เมื่อกีฬาโอลิมปิกฤดูร้อน พ.ศ. 2559 สหพันธ์สาธารณรัฐบราซิลได้เป็นเจ้าภาพในการจัดการแข่งขันกีฬาระดับสากล อย่างไรก็ตามเหล่ากองทัพนักกีฬาต้องเดินด้วยท้อง แหล่งพลังงานอันสำคัญมาจากอาหารอันโอชะในแต่ละมื้อนั่นเอง ด้วยเหตุนี้ ทำให้ชาวโลกหลายคนได้รู้จักบทบาทอาหารจากแดนทวีปอเมริกาตอนใต้กันมากขึ้นกว่าเดิม และหนึ่งในประวัติศาสตร์อาหารที่ดำเนินมากว่าหลายศตวรรษ คือ อาหารเปรู “ต้นตระกูลของผมมาจากประเทศญี่ปุ่น พวกเขาอพยพมาอยู่ประเทศเปรูในช่วงสมัยสงครามโลกครั้งที่ 1 ผมจึงได้เกิดและเติบโตในประเทศแห่งนี้ จึงมีสัญชาติเป็นเปรู แต่เลือดเนื้อเชื้อไขของผมเป็นชาวญี่ปุ่น” เรื่องราวอันน่าสนุกสนานได้ถูกกล่าวขานขึ้นจาก Chef Fernando Gabriel Soeda เชฟอาหารเปรูคนใหม่แห่ง อนันตรา เชียงใหม่ รีสอร์ท เมื่อมองดีๆแล้ว อาหารเปรูมีหน้าตาคล้ายกับอาหารญี่ปุ่นจนแยกไม่ออก นั่นเป็นเพราะการได้รับอิทธิพลทางวัฒนธรรมอาหารในปลายศตวรรษ์ที่ 19 ชาวญี่ปุ่นอพยพเข้ามาอยู่ในประเทศเปรูจำนวนมาก ประกอบกับประเทศเปรูมีดินแดนทอดยาวติดกับทะเล 2,000 กิโลเมตร จึงทำให้คนเปรูบริโภคอาหารไม่ต่างจากคนญี่ปุ่น แม้ทั้งสองประเทศนี้จะมีภูมิศาสตร์ที่ติดกับน่านน้ำทะเลเหมือนกัน แต่อาหารญี่ปุ่นในยุคแรกนั้นก็ยังไม่ได้เป็นที่นิยมกันในเปรูมากนัก ชาวญี่ปุ่นจึงเรียนรู้การปรุงอาหารเปรู จนเกิดการแลกเปลี่ยนเทคนิคการทำอาหารญี่ปุ่นหลังครัวในเวลาต่อมา

Chef Chinadanai ‘Dan’ Boonchaliew and his life partner Primmada ‘Proud’ Kamkulsuntorn moved back to Thailand from Brunei, where they spent several years working on a food delivery company offering up what they called ‘Red Moments’ – or fine dining versions of Thai and South East Asian food in glass jars, and lunchboxes. After returning to their roots in Chiang Mai, they have now re-launched their Redbox company, tuned to Thai palates and wallets. These new ‘red moments’ put an emphasis on ready, edible and distinctive food-to-go.
