I Din Klin Krog ‘Moo jum’ translates to ‘pork dipping’, one of THE most popular social eating experiences, whereby couples, groups of friends, or family come together over a hot pot bubbling with herbal broth, and dip an assortment of meats and vegetables into it. Chopsticks clashing, broth steaming and sauces ratcheting up the heat, this is a fun and typically inexpensive way to eat. I Din Klin Korg is famous for its no-punches-pulled broth which is infused with healthy herbs – galangal, shallots, fresh chilies, galangal, coriander and lemongrass – assuring full flavoured bites with each dip. Go a la carte or buffet for only 139 baht which comes with a choice of pork, chicken, tofu, beef, seafood or mixed. “I love shabu shabu,” said Pirasingh ‘Tan’ Jiachanont, who owns the restaurant with his wife Supaphonr ‘Im’ Jiachanont. “I have spent many moons eating at various shabu shabu restaurants in Chiang Mai and have studied the dish seriously through many media. I decided to make a few changes to the classic experience by elevating the marble bar so it is more like a western bar counter, adding low hanging lights and brick walls for a warm and social dining experience.”

“It is a joy to sit around a table and drop a red slither of meat into a pot, watching it slowly cook with growing anticipation,” said Patapong Aksornvanich while he sat next to his wife and business partner Phakkarada Preechadilokkul, adding, “and the experience gets even better when you have so many elements to mix and match with, whether it is premium meats or fresh vegetables.” When Shabugu first opened ten years ago, we residents of Chiang Mai were still shabu novices, never before having experienced. Ten years on, and it appears that Patapong and Phakkarada’s gamble proved correct, as the city is today crowded with popular shabu restaurants. At Shabugu, the pair decided early on to focus on quality; premium proteins and vegetables from Thai farmers, meats from farms which meet high standards of hygiene and care for animals, organic vegetables and daily fresh and homemade soup.
