Summertime Delicacies: A Celebration of Khao Chae at Anantara Chiang Mai Resort
Chiang Mai – Anantara Chiang Mai Resort invites guests to embrace the flavours of the Thai summer with its seasonal khao chae, a refined royal delicacy served with an array of traditional accompaniments, alongside this year’s highlight ingredient, mayongchid or marian plum, Thailand’s prized summer fruit, creatively reimagined across a selection of dishes to bring a refreshing twist to the dining experience.
As temperatures rise, khao chae remains one of Thailand’s most cherished ways to cool down. Fragrant jasmine rice is delicately infused in chilled, flower-scented water and served with an assortment of meticulously prepared condiments, including shrimp paste balls stuffed with salted egg yolk, stuffed sweet peppers, and shallots filled with seasoned fish. Each element reflects a balance of flavour and craftsmanship, offering a harmonious and elegant culinary experience.
This season’s standout feature is mayongchid, a sweet-and-tangy fruit celebrated for its vibrant flavour and seasonal appeal. The culinary team presents a range of inventive dishes incorporating this ingredient, from Ma Hor Mayongchid and spicy prawn salad with mayongchid to desserts such as sticky rice with mayongchid and chilled mayongchid in syrup, showcasing a contemporary interpretation of Thai cuisine rooted in seasonality.
In addition to khao chae, guests can enjoy a selection of traditional cooling dishes to complete the summer experience. Highlights include khao chae-inspired ice cream, watermelon shaved ice with dried fish, and som chun—a refreshing chilled dessert featuring lychee, ruby pomelo, shredded green mango, ginger, crispy shallots and aromatic citrus zest, offering a distinctive balance of sweetness, acidity and fragrance.
Originating from the Mon community and popularised during the reign of King Rama II, khao chae is deeply rooted in Thai culinary heritage. Its delicate preparation and presentation continue to reflect the refinement of royal cuisine, making it a timeless symbol of summer dining in Thailand.
Bodhi Terrace, set along the tranquil Mae Ping River beneath the shade of a 300-year-old Bodhi tree, provides an elegant setting for this seasonal offering. The restaurant is led by Executive Chef Natruthai Petsuwan, whose expertise spans both Northern and Southern Thai cuisines. Signature dishes include river prawn khao soi, slow-braised pork hang lay, grilled prawn pomelo salad, southern-style crab curry with betel leaves, and wok-fried pad Thai Chaiya. Guests may also discover the art of Thai cooking through Anantara’s signature Spice Spoons culinary experience.
The seasonal khao chae menu and summer specialities are available from now until 15 May 2026 at Bodhi Terrace, daily from 12:00 pm to 8:00 pm. For those wishing to enjoy the experience at home or present it as a thoughtful gift, takeaway khao chae sets are also available, carefully prepared and elegantly packaged for the season. The khao chae set for two is priced at THB 799++ for dine-in and THB 990++ for takeaway.
