Chiang Mai’s culinary scene is about to reach a new crescendo. On March 14th, Lumi Restaurant welcomes Chef Tim Butler the visionary behind Bangkok’s legendary Eat Me (Asia’s 50 Best #25, Michelin Plate) for an exclusive four-hands collaboration with our very own Chef Prince.
Chef Tim culinary DNA was forged in the high-pressure kitchens of New York before he defined a new era of dining in Bangkok. For over a decade, he has curated Eat Me into a global institution, consistently lauded on Asia’s most prestigious lists. His philosophy remains steadfast: uncompromising sourcing, minimal intervention, and artistic presentation.
Equally compelling is the rise of Chef Prince at Lumi. Six Courses, Two Visions The evening’s menu is a sophisticated dialogue between Thai heritage and global innovation. The journey begins with Antipasto I: Hua Hin Oscietra Caviar paired unexpectedly with Namprik, betel leaf, and crispy pork crackling, a bold, salty, and textured opening that demands attention.
The narrative continues through a chilled Chiang Mai Heirloom Tomato Gazpacho with seared scallop and ikura, leading into a Primi of Grilled Blue River Prawn Ravioli bathed in a rich shellfish emulsion and fragrant makrut lime.
For the Secondo di Mare, enjoy Charred Snow Fish wrapped in banana leaf with a vibrant puttanesca twist of turmeric and lemongrass. The meat course, Secondo, features Red Curry Glazed Short Rib accompanied by local smoked bone marrow, a dish designed to redefine comfort and indulgence.
The finale? Chiang Mai Strawberry reimagined with smoked ice cream, black peppercorn, and creamy Burrata. It’s a closing note that challenges everything you thought you knew about dessert.
