Nam Ngiew Vermicelli Noodles

by NEST Boutique Garden Home and Café

Alongside the northern classics such as khao soi, hang lae curry and sai oua, sits kanom jeen nam ngieow, the popular northern dish that is made from fresh vermicelli noodles and a rich, but watery curry served on top. Popular among locals and visitors alike, this dish is one of the North’s most popular and is now represented at the Nest Boutique Garden Home and Café in Mae Rim.

The best part of kanom jeen is the curry sauce poured generously over the vermicelli noodles. Often quite watery, it surprises those who eat it with its rich and layered flavour that is made using special ingredients such as tomatoes and dried ngiew flower stamens. Each chef has their own recipe so every dish is slightly different depending on where you eat it.
At the Nest Boutique Garden Home and Café, they add pork ribs that lifts the curry to another level, bringing even more depth to the dish. Following the family recipe of Daoruang Silapee, the owner of the land the hotel is built on, the Nest’s chefs pay homage to her family’s deep roots in Northern Thailand and the recipes that they have passed down for generations.
