Many years ago the owner of The Gallery Restaurant was visiting China and came across a duck oven grill. He was so fascinated by it that he brought one back to Chiang Mai, and along with his chefs, began to experiment with the contraption. It wasn’t long before they perfected The Gallery’s Grilled Duck, which is one of the signature dishes of the spectacular riverside restaurant today.       One of the city’s first fine dining restaurants, founded decades ago, The Gallery’s grilled duck is a favourite, and arrives tender, succulent and brimming with flavour. The Gallery’s resident chef, Pichet Prawang, says that an assortment of Chinese herbs are stewed into a sticky consistency. They are then stuffed into the duck to marinade for a few hours, before being grilled in the oven. The duck is coated in a layer of honey before serving.     Other duck dishes which The Gallery is known for is its duck khao soy, baked duck with vegetable tips and duck in red curry. If ducks aren’t your thing, never fear, there are over 100 items on the menu, covering Thai, international and Chinese dishes. If you aren’t hungry, sip a delicious cocktail, all the while taking in a beautiful view of the Ping River.     The Gallery Charoen Raj Rd., T.
