New Italian Chef Luca at Le Meridien
Local media were invited to Favola at Le Meridien Chiang Mai to meet their new Italian Chef Luca Gianluca Tidona.
Hailing from Sicily in southern Italy, like many kids in Italy, Chef Luca discovered his passion for the cooking from his grandmother and his mom at an early age. He achieved his diploma at a fine dining restaurant in northern Italy, and he continued his career in various cities such as Geneva, Pattaya and Ningbo in China. Chef Luca also worked in large scale resorts like Mammamia Disney Resort in Shanghai and Hotel Ambassador in Brig Switzerland. Before his appointment at Le Meridien Chiang Mai, he was Chef de Cuisine at Hyatt Regency Wuxi, China.
Chef Luca loves to discover new foods and ingredients, as he believes that there is always something new to learn. With his expertise and enthusiastic drive, Chef Luca looks forward to sharing his experiences with Favola culinary team and creating high quality dishes and a distinctive dining experience that keeps guests returning for more.

Porcini Truffle Risotto: Italian risotto with porcini mushrooms, black truffle, Pecorino cheese sauce
Ravioli all’Astice: Handmade ravioli with poached lobster, fresh mint, Shellfish bisque, tomato concasse, lobster foam
Pizza all Zucca: roasted pumpkin cream, mozzarella cheese, crispy bacon, Sicilian style seasoned ricotta cheese
Polletto all Diavola: Honey mustard glazed roasted boneless chicken leg raised leak spicy chicken jus
Beef Cheek: Eight hour slow cooked beef cheek, truffle mashed potato, thyme, buttered baby carrot, Grand Marnier beef jus, caramelized orange zest.
Braised Pork Cheek: Pork cheek, truffle mashed potato thyme, buttered baby carrot,Grande Marnier, pork jus, caramelized orange zest
Semifreddo alla Ricotta: semi frozen homemade ricotta cream cake, salty caramel, thyme, mou sauce, chocolate, fresh strawberry pistachio
