Story Behind the Dish | Smoked Duck Salad : Rati Lanna Riverside Spa Resort

Sarayut Kaewyont is the Executive Chef of RatiLanna Riverside and Spa Resort’s Mira Terrace restaurant, a spectacular river-front venue. This fine restaurant serves delicious Thai food, international cuisine, and fusion dishes.

 

 

 

This month Chef Sarayut presents his special smoked duck salad with kaffir lime and pepper dressing, a lovely east meets west dish.
The duck is marinated in white wine, thyme, kaffir lime leaves, white pepper and bay leaves before being smoked to bring out all the aromas and flavours. Once infused, a sauce of pepper and kaffir lime leaves is poured onto the sliced duck’s breast before being served with a salad which is brimming with juicy and succulent chunks from a variety of orange-family fruits. The salad dressing is made from orange juice and apple cider vinegar, with a touch of honey, pepper and kaffir lime to add some zing.
