Coffee growers all over the world are innovating to make good use of the large amount of coffee cherry pulps which are often thrown away and wasted (50% of the production of coffee is wasted and often thrown away), into useful products which can enhance the earnings of farmers as well as recycle discarded waste, the pulp especially being toxic to the environment due to its high levels of caffeine. Some turn pulps into creams, air fresheners, or fertiliser, while one Chiang Mai business is leading the way in such innovation, it is already winning awards.

Summer is here! And one super popular way to cool down is to head to your favourite shaved ice shop for some slithers of ice bathed in all things sweet and good. That is why our city’s chefs and restaurateurs are busy creating dishes designed to help cool you down so you don’t get too hot under the collar, or belt, this month. The Ironwood is a charming restaurant just ten minutes’ drive up Mae Sa Valley from the Four Seasons; lush green ferns dripping from ceiling pots, lush green tropical gardens and a cool greenhousesque dining area and even a on-site stream you can go dip your toes in. But if that isn’t enough to keep the heat at bay, order the exciting new dish created just for this summer: the cold duck salad.

Cool down from the heat with Japanese cold noodles at Duangtawan Chiang Mai. The silky noodles are served with numerous side dishes including grilled mackerel, salmon, surimi, teppanyaki, sweet egg rolls and various vegetables. A Japanese buffet is also available with over 50 dishes to choose from including sushi, sashimi, salad, soup, grilled aubergine with miso sauce and a variety of desserts. Prices are 480 baht per person and 240 baht for children ages 6 to 11.
