Uk Salmon with Apple by Four Seasons

When Four Seasons’s award winning Khao Restaurant’s young Chef Anchalee Luadkham picked Spoon&Fork’s anniversary challenge ingredient and found that she had to create a new dish featuring the green and red apple, she got excited. “The concept of Khao is to take a gastronomic journey through our region, whether it’s to Laos, Myanmar, Yunnan, Thai, Lanna or even a splash or international flavours,” explained Chef Anchalee. “Our focus is on the quality of produce, whether locally or imported, and we are a big fan of the Royal Project, whose produce we often combine with herbs and spices planted in the resort itself. The aim is to showcase culture, lifestyle and the creativity of our region through the journey of food.” “One of our menu staples is the Sturgeon Uk which also features apples, but we decided to take it a step further and use salmon instead of sturgeon. We grill the salmon, allowing it to rest, before we make the uk sauce from dried chillis, shallots, garlic, galangal, lemongrass, shrimp paste, turmeric and finely diced apple (‘uk’ is a typical northern Thai technique of braising).
